Hi everyone! What would you say if I told you that salad could bring you closer to clear skin? Let me be honest here and tell you that salad is probably my favourite dish. I have it every single day for lunch and I don't think I could ever get bored of it. Honestly, there are so many different variations of ingredients and dressings that I don't think anybody could ever get bored of it. Even the pickiest person can find something they like. I just love the way it makes me feel - you know, so satiated but light, clean, healthy, energized... It's amazing. Another reason why I love it so much is because most of the ingredietns or all of the ingredients are raw. Obviously, because of that the nutritional value of all those ingredients is much higher. Finally, I think I could attribute a lot of my success in fighting acne to eating a lot of salads. They definitely helped me a lot and I hope they will help you too! Well, all the ingredients in the salad are super healthy for you. But I would take every single ingredient one by one and just give you a little overview of what goodness hides inside those ingredients. So let's go ahead! This is just a little snippet. If you much more details, just head over to my blog at vitalivesfree.com, and you'll find lots more information there. Let's start from lettuce. Lettuce, first of all, is a great source of Vitamin A and B-complex group of vitamins. Most importantly, I love it because it helps you keep healthy acid/alkaline balance in your body - it's extremely important for healthy skin. My personal ti f you eat something naughty and get a headache or itchy skin as a result, eat some leaves of lettuce - it will counteract some of the damage. Tomatoes - they are rich in lycopene, a powerful antioxidant linked to cancer prevention and bone strength. But most importantly, it's been linked to smoother, less wrinkled skin. Cucumbers - those are full of B vitamins and they are around 95% water, which will help hydrate your skin. Seeds - they are valued as an important source of zinc, which is vital for acne free skin. They are also a great source of Vitamin E - it will maintain the youth of your skin. Flaxseeds are a great source of Omega-3 fatty acids. Extra virgin olive oil - it's known for strong anti-inflammatory and anti-oxidant properties. It improves the balance of bacteria in the gut by slowing down the growth of bad unwanted bacteria. Balsamic vinegar - contains antioxidants called polyphenols. They protect the body from heart disease and cancer, as well as protect your skin cells. Eating salad with balsamic vinegar slows down the absorption of sugar into yur bloodstream. Therefore, it reduces the insulin reaction. OK; bored? Let's move on to some action. Here's the exciting bit. This is what we're going to need. First we're going to need 4 ounces or 120 grams of lettuce. I like to mix some rocket and some regular lettuce. Make sure you get dark green or red leaves. Try to stay away from iceberg lettuce - it doesn't have a lot of nutritional value. Then we're going to need a big tomato - I didn't have a big tomato, so I just took two medium ones. And we're going to need around one cup of sliced cucumber. Around 4 ounces of cooked chicken. This is just leftover from yesterday. We're going to need around 3 tablespoons of seeds - here I have some pumpkin seeds, flaxseeds, sesame seeds and sunflower seeds. And for the dressing we're going to need extra virgin olive oil, vinegar - that's balsamic vinegar. Finally, salt and black pepper. First of all, what I'm going to do is I'm going to shred the lettuce. Never ever use a knife when you're doing this because you'll get rid of a lot of good stuff. Just use your hands. OK, then we're going to grab the tomatoes and simply slice them. Do whatever you like - I like slicing them and then chopping them into three more pieces. But it's really up to you, whatever you really like. Next, we're going to grab the cucumber and slice it. I chop it to smaller pieces too. Then we're going to add the chicken and I've already chopped it. So let's just pop it in. Next, we're going to take our seeds and sprinkle them on top. Finally, we're going to make the dressing. For that, we need to take 2 tablespoons of extra virgin olive oil. Then we're going to take 1 tablespoon of balsamic vinegar, sprinkle a bit of salt, a bit of black pepper. Then we just have to keep missing it until it emulsifies - it becomes one nice solid colour. Alright, we're done! Let's just pour it over the salad and that's it. The meal is ready. Just going to mix it really well. And that's it! Honestly, making it doesn't take it anymore than 10, maximum 15 minutes. It's super quick, super filling, super healthy and will bring you one step closer to clear skin. Now I can't wait to try it! Mmmmmm, amazing! Really really good. I really hope that you like this recipe. Feel free to vary the ingredients - you can add some avocado or radish, courgette instead of cucumber, raw red pepper, green pepper - anything you like. And you can change around the dressings - I promise you you'll never get bored. Every time it will taste completely different. I really hope you like this salad.
